Kwanzaa is a nonreligious African American holiday created in 1966 by Maulana Karenga to celebrate family and social values, with each day dedicated to one of seven principles, and traditional foods such as catfish, greens, black-eyed peas, macaroni and cheese, and freshly harvested vegetables and fruit.
